conversions for egg subtitutes

i need help w/ some of the recipes in the book, such as: quiche cups.
he calls for 3/4 c. liquid egg substitute. Since whole eggs are not
prohibited, and i have fresh eggs on hand, i’d prefer to use them…
anyone know some conversions?
thanx alot…

  1. Melody Leblanc Says:

A large egg is about 1/4 cup, so use 3 eggs in place of 3/4 c. of egg
    substitute.

Usually a large egg will measure 1/4 cup. I just used the same amount of
fresh eggs in place of the egg substitute and it works just fine.
