low fat cheese questions

Hello,
I wrote a while back while trying to get it together to start. I’m from
Canada and had trouble finding certain items. Have located liquid eggs
with 80 less cholesterol :-) (am trying to lower mine).
Still having trouble finding that turkey sausage. I bought some locally
made chicken sausage but it felt way too fatty. Will try another store
where it’s a brand name and they say the cholesterol/fat ratings.
One question perplexes me.
What is a low fat cheese? I mean, I find cheeses to try that have all
different milk fat %ages and just wonder what percentage of milk fat a
cheese can have (for phase one) and still be considered a low fat
cheese. I can just eat so much cottage cheese! Those mozarella string
cheese sticks are about 18%. Ricotta is about 7%. Are these all
appropriate? Or, if not, how do I determine it with the cheeses?
