On the south beach website there are vegetarian meal plans. If soy and tofu dont you bore you I dont see why you cant do south beach and be a vegetarian.
How strict a vegetarian are you anyway? eggs? fish? if you just dont eat meat- then there are still so many options.
South beach is adaptable to even the finickiest eater- I know I have one in my house.
Here is a new recipe that i have developed and has been a big hit.
Brancakes
1 cup oat bran
1 cup whole wheat flour
200 ML 3% fat leben
200 ML water
1 tsp vanilla extract
2 eggs
2 tsp baking powder
1 tsp Cinnamon
mix well
grease frying pan
yield is 10 brancakes
serve with your favorite sugar free jam or flavored syrup
