I have similar constraints. I can eat as much meat as I want, but doing so
caused my cholesterol to go up, so I’m sticking to lean meats, mainly chicken
breast.
I can’t eat beans or high fibre veggies. The only dairy I can tolerate well is
dry curd cottage cheese and full fat cheeses. So I eat the DCCC, bake with it,
blend it with some water and use it as ricotta. And I use a sprinkle of parmesan
here and there.
Fortunately I can have some salad each day, a peeled, deseeded tomato. The
veggies I can eat are peeled zucchini and mushrooms. I can tolerate one small
orange most days. For the rest, I take supplements, including digestive enzymes.
Have you ever heard of the specific carbohydrate diet for people with digestive
problems.
