Quinoa
Hi Chistian,
Just saw your message about Quinoa. This happens to be one of
my “discoveries” on SB. I had been reading some health magazines and
this has been mentioned so much in recipes that I had to find out
about it. I buy it in my supermarket in the health food section.
I had to laugh when I looked it up on the internet and found out it
has been around for 5000 years! My husband is a diabetic and it also
fits in well with his diet.
I use it as a side dish, similar to a rice use, but it is not a grain
but a “seed of a leafy plant that’s distantly related to spinach”
(for anyone who is interested). I like to toast it first - yum!
This is not something I have every night. I have added this to my
menus and having been on SB for over a year and holding on a 50 lb.
weight loss so I think it fits in fine!
