A few comments about recent posts

I don’t know if it is local only but I like Snoqualmie Falls Lodge Oatmeal. They are thick and very good. I really think they are a hearty oatmeal. I don’t know if they are steal cut kind or not but they are good.

Oatmeal. We’ve been eating steel cut oats for years and love them. The first we had were a gift–McCann’s Irish Oats in a tin can. They’re a bit pricey. The oats that I find in health food stores are indistinguishable from McCann’s, at least to our thinking. I now find them locally in grocery stores such as Kroger, Food City, etc. Bob’s Red Mill is the usual commercial brand I find. Ask your grocer to order some, if it’s still not available. That brand is usually less than half the price of the McCann’s. BTW, Bob’s Red Mill also offers a wide assortment of grains. I buy my vital wheat gluten, 7- or 10- grain cereal, and assorted flours in the same section of the grocery.

I just signed up for the South Beach Diet’s official site. Since
dietary guidelines for nursing mothers has been a concern on this
list, I thought I’d share with you part of the guidelines for nursing
mothers from the official site:
“Begin in late Phase 2, when you’ll be including three servings of
fruit and three servings of starch a day. Also make sure that you
include 4 cups daily of either fat-free or 1 percent low-fat milk,
buttermilk, plain nonfat yogurt (add your own extracts and/or sugar
substitutes), and/or soy milk with 4 grams of fat or less per 8-ounce
serving. Lactation experts suggest you take in extra calories as
well milk production requires about 800 extra calories per day, and
it takes roughly an additional 500 calories to maintain energy levels
during milk production. To determine your specific caloric needs,
speak with your doctor.”
Also, “Don’t Lose Too Fast. A good rate of weight loss for nursing
mothers is 1/2 to 1 pound per week. Increased rates of weight loss
may affect milk production and interfere with successful breast-
feeding.”

I’ve been on Phase 1 a couple of times to jump start my progress after
beeing on Phase 2. Have lost almost 35 lbs and I believe in SBD. The
key is to make the diet YOURS! Eat reasonable portions of the allowed
foods in order to keep yourself satisfied. Eat the foods you enjoy
and take time to prepare. I am on Phase 1 now and I have completely
eliminated caffeine and I am hardly ever hungry. (The first 3 days I
had headaches from caffeine withdrawl but now I am feeing great). The
word in weightloss circles is that caffeine stimulates the
appetite….and I certainly didn’t need that. Plus the high
consumption of proteins on the diet regulates blood sugar which keeps
hunger pangs in check. I eat 3 meals and 2-3 snacks daily. Good luck
and stay focused. This group is great so you are in the right spot
for motivation and support.

Pasta

I don’t often write, but do read every post. I have been on this “diet”
and am completely satisfied losing 40 pounds and keeping it off. The
only thing I craved was Pasta (I got in trouble with a member on
another list, so this is just my idea and thoughts and I think I can
help some of you) Have any of you tried Dreamfields pasta? When I first
learned of it, I was very sceptical-but decided to try it. I ate it
for 4 days in a row, and not small portions-not an ounce gained. They
have a Web site, I think it’s Dreamfield.com where they explain why,
but I can’t understand it. I will just keep eating my pasta, and hope I
have helped some of you. (it is more expensive, but it kept me on plan)

Portion size AND a sweets question

I see the acceptable foods for Phase 1, but I have a question. Is
there anywhere that’s a little more detailed that tells me that I can
have x amount of servings for those foods?
As an example, in Phase 1, it states that portions are unlimited
unless otherwise noted. Well under BEEF one of the acceptable foods
is Bottom Round. It further details that it must be a lean cut,
meaning that it has, per 100 gram portion, 10 grams or less of total
fat and 4.5 grams or less of saturated fat. It does not say how many
servings I may have. If I wanted 2 servings of a piece of beef that
has 10g per serving, that would give me 20g of fat, which is more
than the 10grams that I’m limited to.
Other foods, I’m allowed to have unlimited (e.g. eggs), but there are
others that have restrictions.
I know that I’m supposed to eat a meal until I’m satisfied, but not
full. But are there limitations?
In addition to this question, hypothetically…
Let’s say that I have sugar free gelatin at lunch and 4 pieces of
hard candy throughout the day (all totaling 40 cals). Can I still
have a dessert after dinner or a sugar free fudgcicle that evening?
What is the difference between the 75 sweet calories that I’m allowed
that day and the dessert?

Just started!

Hubby and I started this today. I seemed really hungry even though i
followed the menu for day 1. Is this normal? If i get hunger pangs,
what if anything can i snack on? Can you snack on something AFTER
dinner? I tried the ricotta cream and just about lost it. yuck. I did
buy sugar free/fat free fudgepops. I basically bought everything
pertaining to the menu’s for phase 1 in book for next 7 days. I stuck
to menu today and i feel lost. incomplete. Any suggestions??
Any help greatly appreciated! OH…almost forgot. I am 34, 155lbs.,
5′7″. Two great kids ages 11yrs, and 18 mnths. I had gained almost 60
lbs with both and its harder for me to lose it this time, and i still
look pregnant. Thats one of the reasons why i am starting this.

Whole Wheat Pastas

I’m confused. I wanted to buy a pasta, but was suprised at all the
choices on the shelf. I didn’t know what to purchase. When I looked
at one brand (Ronzoni Healthy Harvest Whole wheat blend) the
ingredients were exactly the same as on their regular pasta…they are
also the cheapest, which made me think they were playing a packaging
game.
Can someone educate me on what should I be looking for in a pasta?
Also, what about the dried spinach pastas (or are they just spinach
blended with regular pasta?)

I buy my vital wheat gluten, 7- or 10- grain cereal, and assorted flours in the same section of the grocery.
I cook mine in my little crockpot. I bought one that has HIGH, LOW, and WARM settings. I spray the pot with vegetable spray before adding the water, salt and oatmeal. I use a 4:1 water:oatmeal ratio. This really cooks on HIGH in about 3-4 hours; LOW takes 5-6. I set up the pot before we go to bed and turn it on LOW. As soon as we get up, we turn the pot off and give it a stir. The cereal is always done. Turning the pot off allows most of the cereal sticking to the sides to loosen.
For the two of us, 1 cup oats to 4 cups water allows a least two meals. Leftovers store in the refrigerator and heat nicely in the microwave.
I sometimes add nuts or fruit to the cereal, but haven’t done that since beginning SBD.
Bread. One of the reasons I’ve had to shed all this weight is that I’m addicted to bread. Haven’t had any in a month and surprisingly, don’t miss it–much. I’ve not tossed my starters though. I make rolls for my grandchildren and loaves for friends. I’m now making them healthier. Here’s how:
Use whole wheat flour (try King Arthur’s if it’s available or look on-line)
for at least half the flour.
Add 2 tablespoons vital wheat gluten, 1/2 cup wheat bran, oat bran or cracked wheat, and 1/4 cup ground flax seeds.
Bake as usual.
This sort of follows the suggestions in one of the SBD cookbooks.

Breakfast - most important meal of the day

Okay, I’m still learning with this SBD business. And it’s all good.

I was one of those people who used to skip breakfast every day. Just didn’t want/need it. Not that I don’t love eggs. I do! But I love them around midnight! LOL I never thought I’d come to enjoy Egg Beaters, but I love them, too! I love making all kinds of omelets with them.

However, today I did something completely different. I had a leftover salad from last night. So, after I got up and took my morning meds and took my shower, I grabbed the salad and decided to have that for breakfast. And it was delish! That was at 10:30am.

Around 1-1:30pm, I wasn’t exactly hungry, but I’d grabbed some coffee from Dunkin’ Donuts and I’m so used to having something with my coffee that it seemed logical to fill that space with something. I had bought a package of the SBD Meal Replacement Bars. Yum! These are fabulous! I bought the Chocolate Peanut Butter ones, so I had one of those with my coffee and I have to say that hunger-wise, I’m doing much better than when I eat an omelet for breakfast. That salad really filled me up!

For supper I’m grilling some pork chops, making another salad and making some green beans with almonds. I might have a package of frozen potatoes in the freezer to give to my husband if he really needs the carbs.

I’ve learned a whole new way of eating breakfast now, and I feel so free! I think that for all the new members who are so confused by this new way of eating, think out of the box. Think about foods you really enjoy that are “legal” and make them work FOR you! You’ll be amazed at the results.
